This rye bread recipe is lower in gluten than your average white loaf – this recipe uses white or wholemeal flour to give a light texture but you can experiment with ratios.
To be honest, i was dying for home made bread. And i know that I always keep a rye flour in my kitchen. So i rolled up my sleeves and i get to work.
Just to note that rye bread contains a large amount of fiber and a small amount of fat. Compared to some breads such as white bread, rye bread has a lower glycemic index, which means it causes less of an increase in blood sugar after being eaten.
However, lets’ start !
- 110g rye flour
- 200g flour type 400 (American cake flour)
- 1 tsp of dark Himalayan salt (The quality salt should smell like hard-boiled or rotten eggs caused by the sulfur compounds)
- 1 tsp brown sugar
- 1/4 tsp of baking powder
- 7gr dry yeast
- 40 ml sunflower oil
How to prepare it:
Combine all ingredients in a big bowl and mix them with a wooden spoon. I don’t know about you, but every time i make a dough i surely use wooden spoon.
In a cup of tea pour 150 ml warm water (not hot, because it kills the yeast), add the brown sugar, flour (just a little, on the top of the spoon) and mix well to dissolve the sugar. Then you can add the yeast and let it for a 10 minutes.
Add the yeast (which we have already begun to ferment) to the dry ingredients, add the oil and knead smooth dough. Leave it t 30 minutes at room temperature, covered with plastic wrap.
Then form the loaf as you want and allow it to grow for another 30 minutes (under the same conditions as the first time). If you plan to make some scoring on the dough with knife, do them after you spend 30 minutes and let it for 10 minutes.
Before baking i usually knead it with sunflower oil on the top, and than i put it to bake in heated oven at 200 degrees for 30 minutes. At the end i use the oven ventilator or 2 more minutes just to get the color. Important rule for each pastry, after baking you have to leave the bread to get cold for a while. If you crop the bread immediately while is still hot you will ruin the product!
After this i start eating only bread, butter and salt 🙂 So healthy and delicious 🙂
